Vegan Peanut Butter Cookies

These cookies have a lot of my favorite things: spelt flour, peanut butter, maple syrup and dark chocolate.  Plus they are a snap to make and incredibly delicious.

Vegan Peanut Butter Cookies

Makes 20 medium sized cookies

Ingredients:

1 cup spelt flour
3/4 teaspoon baking soda
1/2 teaspoon sea salt
1 cup peanut butter
1/2 cup maple syrup
1/3 cup dark chocolate chips

Vegan Peanut Butter Cookies

To do:

Preheat oven to 350 F

Combine the dry ingredients in a medium sized mixing bowl, then stir in the peanut butter, maple syrup and fold in the chocolate chips. Roll tablespoon sized scoops of dough into balls and place on a cookie sheet. Press the cookies with the back of a fork.

Bake for 10 minutes. Remove immediately and transfer to a metal rack to cool. Take care to not over cook.

      Oh Thanks you so much Clare! I have always used spelt but I would imagine that regular flour would work just fine. Spelt is basically wheat, but easier to digest for some people who are sensitive so gluten. I personally love the mild, nutty, sweet taste of spelt so that’s why I use it. Let me know what kind of flour you use and how they turn out!

      Thanks Jacquie! Good to know you have maple syrup down under! I was wondering. 🙂 They are so good. And very versatile. my kids love them after school and I love them with black coffee mid morning when I need a protein packed sustainable energy boost. Enjoy!
