I love the crowd pleasing simplicity of brownies for dessert. Perfect to end a casual dinner or tote along on a picnic. These brownies get a rich flavor from a dose of cold brew coffee and are graced with a gooey dulce de leche topping. They are seriously chocolatey but are still pleasing to a kid’s palate. win-win.
1 cup all purpose flour
1/3 cup cocoa powder
1 Tablespoon ground chia seeds
1/2 cup cane sugar
1/4 cup ghee (gently heat to soften it if you store yours in the fridge)
1/4 cup cold brew concentrate diluted with 1/4 cup water
2 Tablespoons whole milk
dulce de leche I used nearly 1/2 of a cup. You can use less (or more!) as you see fit.
Preheat oven to 350 F/ 180 C
In a medium mixing bowl, stir together dry ingredients and then mix in the ghee. Add the cold brew and milk. Pour mixture into a 9 inch pyrex pie plate and use a large spoon to spread it evenly (it hass a pretty thick consistency). Heat up the dulce de leche and then pour onto the top of the brownie.
Place in oven and bake for 30 minutes. Remove from oven and let cool for about 20 minutes then remove from pan with a knife (to loosen the edges) and a spatula. As you can see this is a square not a round piece. I cut off the round edges so I can sample to results and still have a pretty presentation. It also makes it easier to remove in one nice clean square and really, who can resist!? Serve on a pretty plate and enjoy!
