Cranberry + Orange Oat Cookies

Vegan Oat cookies with orange + cranberry. Ok, sometimes I make these with chocolate chips. Orange and chocolate! That’s a great combo. But the fresh, tangy burst of cranberries is a definite treat that makes this cookie a totally different experience. They go great with hot coffee and are easy to pack along for school or other adventures.

Ingredients:

1 cup large flake rolled oats
1 cup wholewheat flour
1/2 cup cane sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 Tablespoon ground chia seeds
1 Tablespoon golden flax seeds
1/2 teaspoon ground cardamom
1 Tablespoon freshly grated orange peel or 1 teaspoon ground dried

1/3 cup frozen orange juice concentrate
1/2 cup water
2 Tablespoons oil
1 Tablespoon vanilla

1/3 cup dried cranberries

To do:

Preheat oven 350 F

In a large bowl, mix all the dry ingredients. Stir in the wet ingredients and then add the cranberries.

Drop spoonfuls of dough onto a cookie sheet and bake 10-15 minutes, defending on size. They are done when golden but still soft and chewy, as a good oat cookie should be.

  • Wow, Steph, these look gorgeous and the cranberry orange combo sounds a winner. I’m not vegan or vegetarian but I’m so pleased to have found your blog as it looks like it has some really good, healthy lunchbox and snack options to try. I love baking but do fall into the trap of often baking quite indulgent unhealthy treats so I’m gonna take a look around and get some inspiration and ideas. Thanks! x

      Thanks Kate! It’s ok, I’m not vegetarian either. I just have vegetarian tendencies 🙂 and aspire to teach people new and healthy ways to get more vegetables in their lives. I hope you enjoy the cookies!
