Stock up on the ingredients (pantry items/ frozen veggies, beans, bread/canned and jarred goods) you need so you can always make these meals in a pinch.
Black bean chili and quesadillas (serve the quesadillas first as an appetizer while the chili cooks)
Autumn harvest pasta. Diverse ingredients and flavors that you can have on hand at all times.
Hot and Spicy stir fried veggies. Tip: start cooking the pasta the second you get in, it’ll be done just as you finish getting all the other ingredients ready!
Veggie burgers. I always have some in the freezer for last minute meals. Heat them up, and let everyone assemble them to their taste.
