Banana Teff Cookies

Ingredients:

1/3 cup whole grain teff
1/2 cup brown rice flour
1/3 cup rolled oats
1/3 cup unsweetened shredded coconut
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon chia seeds
1/4 teaspoon cinnamon
1/8 teaspoon salt
2 bananas, mashed
150 grams silken tofu (maple flavor)
1/4 cup mini chocolate chips

To do:

Measure dry ingredients into a large mixing bowl.  Stir to combine.  Add the mashed banana, tofu and stir until everything is mixed in.  Then add the chocolate chips.  Drop large spoonfuls onto a cookie sheet.

Bake 350 F for 20 minutes.
Makes about 12 cookies
