Thanksgiving Day Pumpkin Smoothies

Do you ever get caught up wondering what to eat for breakfast on Thanksgiving Day?  You know you have to eat something, but there’s a temptation to skip breakfast–yet you know if you do that you’ll feel sick, be grumpy and end up regretting it later.

So what’s best?  A smoothie of course.   These pumpkin smoothies will give you a serving of vegetables, a dose of fiber and taste great.  They provide sustained energy to keep you going all the way til the big meal but are easy on the digestive system as well.

Turkey trot energy smoothie
Serves 2

Perfect before or after a Thanksgiving Day 5k.

1/2 cup pumpkin puree
1/2 cup rolled oats
1/2 frozen banana
1 cup chocolate milk of choice
1.5 teaspoon spices such as cinnamon, nutmeg, allspice, ginger
1 teaspoon maple syrup
Optional :
1 Tablespoon Chocolate covered cacao nibs

Add all ingredients to immersion blender (except nibs) blend until smooth, top with nibs and enjoy!

My favorite, it’s less sweet and satisfyingly thick so you eat it more slowly.  It really keeps you satisfied for hours without feeling stuffed.
