Baked sweet potato chips

Yummy, healthy sweet potato chips. I’ll make these if I am already using the oven, have a sweet potato or two on hand and want to make the house smell extra sweet and cozy.

You’ll need:

a large sweet potato, sliced thin about 1/8 inch
1-2 Tablespoons olive oil
a bit of salt

and a large cookie sheet.

To do:

Preheat oven to 400 degrees F

Toss the potato slices with olive oil and place onto the cookie sheet. Sprinkle with salt and bake for 15-20 minutes, turn each one over and return to oven for another 10-15 minutes. The thinner the slices the faster they cook. Very thin slices might cook through with out the second cooking time– something to think about if you are in a hurry! Thicker ones will be delicious but won’t crisp up.
