Whether you are new to tempeh or a raving fan, this recipe is fast, convenient and tasty. It’s a great lunch box meal too.
1 package tempeh
1 Tablespoon vegetable oil
1 cup of your favorite BBQ sauce
1 bunch scallions, chopped
Sprouted beans (optional)
Chop tempeh into 1 inch cubes.
Heat oil in a medium skillet and add 1/2 of scallions and tempeh. Stir until tempeh starts to get slightly golden. Then add BBQ sauce and cook for 5 more minutes or until the sauce starts to thicken and caramelize. Try to get the edges of the tempeh to darken because that just makes it really awesome.
Remove from heat and serve over rice and any vegetables you like. Garnish with the rest of the scallions and sprouted beans (if using).
