Vegan Pumpkin-Date Muffins with mini chocolate chips

It’s October and time to roll out the pumpkin recipes!

Preheat oven 350 degrees

Ingredients:

1 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 cup pureed pumpkin
1 cup rice milk
1 teaspoon vanilla extract
10 dried dates, minced
1/3 cup mini chocolate chips

To do:

Mix all ingredients together, pour into paper lined muffin tin.
Bake 350 F, 22-25 minutes

Makes 12 regular muffins.
