Vegan Brownies

Chocolaty, rich, and fluffy. Delicious right out of the oven as the chocolate morsels are still melting.

In a large bowl, beat the sugar and coconut oil together until creamy, using an electric mixer.
1 cup sugar
1/2 cup coconut oil

Then add:
1 cup spouted spelt flour
2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup cocoa powder
3/4 cup rice milk
1 Tablespoon vanilla

Mix on low until smooth.

Add 1/4-1/2 cup vegan chocolate chips or other chocolate cut into chunks.

Pour into an 8″ square baking pan and bake at 375 for 20-25 minutes.
